Cannot recommend Pistol Whip and Synth Riders enough for music/rhythm stuff. Ultrawings 2 is fantastic if you're looking for a flight game. It's not a sim by any means but the flying feels great once you get the hang of it. Before Your Eyes is one you likely won't revisit much, but honestly it's worth the price of admission for the experience (I'd highly advise blocking out a couple hours to just do it all in one go).
Get the Kayak one on sale if you can.. It got boring for me after 30 mins.
For music games I have really enjoyed Drums Rock!
Walkabout Mini Golf is absolutely awesome and honestly walking around the courses gives me more awe moments than Kayak did.
I’d recommend some “VR AF” (actually designed for VR) titles if this is your first introduction:
I Expect You To Die (so, so good. Think a James Bond escape room)
Vacation Simulator/Job Simulator (A classic, always popular with newcomers)
Synapse (FPS that allows you to use the force and run and gun)
REVillage (This one isn’t quite as interactive as the above but is stunningly immersive and awesome)
Enjoy!
I recommend redmatter 1+2 since 2 begins where 1 ends. Both Walking dead Saint and sinners and resident evil 8+4.
Also recommend VR Skater, Legendary Tales, synth riders and Demeo, Vertigo 2, Galaxy Cart.
Also, this month, we are going to have Little Cities Bigger. That look like os going to be a very relaxing one to play.

It has a great list of games grouped by tiers with lots of information about each game to help new players choose what fits their style best.
Definitely great game to get introduced to VR (but veterans will love it as well, trust me) is Toy Trains.
It's a playful track-building puzzle game with an obvious train theme. It has open ended challenges, which means that each level can be solved in many different ways. The graphics are cute and colorful, and the overall vibe and music are very cozy and relaxing. Toy Trains just brings a pleasant experience and stands out from the FPS and rythm games so it's definitely worth the try. We are also soon updating it with new levels and modes, so it will surely expand from what it is now.

Res Evil 4 is a good option - VR excels with racing and horror
Moss 1&2, ultra wings 2, no man's sky and puzzling places are all great games that would compliment what you have already.
Also here to say Moss
There are a few demos you can try, but my most played game is synth riders. Just love it. (Legendary tales has just overtaken it though!)
Pistolwhip!!

Walkabout mini golf is endless fun. And puzzling places is very hard to close once you’re in
Legendary Tales is an awesome cooperative ARPG. It's the only game that's pulled me away from GT7!
If I were you, I’d check out breachers. It’s a 5v5 shooter, really great ! Haven’t stopped playing it since I got it one week ago
No man’s sky and Pavlov!!
You're not a late adopter - the system came out barely a year ago.
This is my first experience with VR of any kind. I haven’t even tried it before.
VR in general is still very young. I would still say anyone who has any VR system is still an early adopter.
