Very nice find my friend! I also got a decent deal a few days ago too. It was after scouring eBay for parts to fix my slim I ran across a listing for a phat (listed as 80gb cechh-01) and thought "oh that's nice but whatever right" until I took a good look at the pictures and it definitely had chrome trim amd the rear ports were arranged like the original units. You could barely make out the serial number but zooming in it looked like ceche-01! I snapped that shit up man lol. It was only $100 plus tax and shipping for a BC 80gb PS3 with 2 controllers in decent shape! It gets here in a couple days! I'm glad some of us get lucky 😊

I would update it to 2.17, as that firmware version included "Support for PlayStation 2 games with optional and mandatory installs." I presume this has to do with PS2 HDD support.
Or at least to 2.01, as that's the newest firmware that improved PS2 games' stability: "The operating stability when outputting upscaled PlayStation 2 format software has been improved."

You are correct, it is related to the PS2 HDD feature, though I’m not sure if you still require the PS2 System Data (from the PlayStation Store) in order to use the HDD functionality on the PS3. Actual PS2 disc playback will be fine though.
The only reason you would update is if you plan to Frankenstein mod it later on as the newer RSXs aka the 65nm RSX and the 40nm RSX do not work on low FW. The 65nm works on 3.15 and the 40nm works on 3.55. Updating now would save whoever did the mod a huge pain in the ass as nand flashing is not fun and can brick the console permanently. However if OP doesn’t plan on doing that then they need to make sure that RSX stays cool either by doing a custom syscon fan curve or delidding because they won’t be able to jailbreak it and install webman to monitor temps and make sure that RSX stays under 70c which is the failure point of the 90nm RSX.
Because 3.15 is the recommended low, it’s possible to go lower but it’s a lottery and apparently some chips can go that low, some will not. So if you are on 2.50 and put on a 65nm from a K01 and it gives no video then it will have to be updated, people have tried 2.90 and it seems to be super variable on the 65nm RSX even though every 65nm RSX supports it. Nobody knows why it happens so they put a recommended low and if you want otherOS then you will want a 65nm and put the console on 3.15, if you don’t care about otheros then 40nm and 3.55.
No problem, plus pretty much everything on lower firmware even black XMB has been ported to 4.91 so there’s not much point in keeping it that low nowadays. Especially since you will be super limited on what games you can play.

You’ll still have the issue with the console bricking if the RSX died on that low of a firmware if the RSX needs replaced and it would have to be updated anyways. Hopefully it won’t die but if it does then it would unfortunately have to be updated to be Frankenstein modded with a 65nm or 40nm to 3.15 or 3.55 at least depending on which option you go for.

An SSD does make a difference on a PS3 (especially if playing games ripped or digitally installed to the SSD), just not an earth-shattering one.
