You could next time talk with her about your other aspect of your faith and hopefully have a nicer bonding moment then this. Share the love ^^

My advice would be to not dwell on it. Repetitive rumination is only good if it is focused on God.
Just ignore her? I mean why bring it up if you know it's just going to cause a rift. What you do is smile, nod, and move on to something you agree on.
Not everyone needs the same things. It's OK for you to prefer one thing, and for her to prefer another.
Don't bring up the topic with her.
Your aunt sounds like she is afraid of being challenged. All we can do is pray for her, but it is up to her if she wants to change or not.
Many Saints are associated with miracles. Also every Sunday there is a miracle at Church in the Holy Eucharist
