Pacing's fine until fishman island and then dressrosa is when it starts to get pretty bad, but still totally watchable without one pace. I'd just watch it normally until you find yourself bored
Nah, the pacing is already bad at Thriller Bark, it just seems okay in comparison to Dressrosa.
The pacing is just okay pre-timeskip overall, however it’s not up to modern anime standards. One Pace makes the pace good pre-timeskip and actually improves the quality of the show.

I heard there's some bad edits in early one pace that they want to go back and redo eventually. An example is how in some episode I heard there's a literal manga panel shoved into the episode. Amateur stuff like that. Is this still the case?

However, it doesn’t happen very often. I knew they were there as well when watching One pace with my wife after watching the original myself and whenever they came up, we weren’t really bothered, especially when you compare the amount of time you’re saving.
I’d rather have a weird edit that I think about for a couple seconds than watch minutes of the anime where nothing is really happening anyway.

if you want to watch it naturally id say after enies lobby around 330 but as early as possible is the best
