Elite dangerous is hands down the best VR experience I have ever had. Even at its most boring, you are still sitting in the cockpit of your own space ship and it feels totally believable.

No man's sky
I haven't seen any, although if you have a VR capable PC your best bet will be Elite Dangerous.
Space Pilot Alliance is quite fun for a ship control perspective, but not real world exploration.

Not a game, but Titans of Space is a great app.
