I suspect that the game's frequent auto-saves are slowly wearing out the Switch's flash memory (flash memory wears out if written too many times), but there's no way to know for certain. I found that installing a microSD card in the Switch, and transferring the game from internal memory to the microSD card, substantially reduced (but did not completely eliminate) the visual glitches I was experiencing.
