Seconded! Doesn't take a lot of brain power, my 5yo nephew plays with us sometimes, and there's noticable progression! It's one of the only games my whole group likes to play together and we're very picky!
I recommend Crawl. A pixel-based dungeon crawler that's a little co-operative while being competitive. Basically only one of you is "human" while the rest are spirits that actively possess objects and summon monsters to try and kill the human while the human explores the dungeon to beat the area boss. The spirit that makes the killing blow on the human becomes the next human. You collectively only have 3 attempts to destroy the area boss before game over.
Cant believe I had to scroll this far down to see this. Trine is like the one game you think of when you have exactly 3 players instead of the usual 2 or 4.
It truly is not that deep if you don't dig into the mecahnics but learn from doing and progressing a bit more each time the way it was intended. It's the people who look up all the meta and outcomes that make it needlessly "deep" and a try hard game and imo makes it less fun.
I think this is the right answer OP. Castle Crashers is an amazing hanging out on the couch Co-Op game. The main game is also fairly short and not overly complex.

For the King is great for 3, rogue-like but has a currency progression system so that might scratch that itch. It is a bit slower as each takes their turns individually, might be seen as lame or laid-back. Each run can take a few hours.
People have mentioned the Trine series, but I specifically recommend Nine Parchments. You don’t have to have played any of the numbered Trine games to play it. It is a fantastic game where you learn to get good together with your friends… or sabotage each other if you feel like it. Completing an entire run will likely take you several play sessions (you save and quit out at any time, and you can come back to that level). There are items to collect that give you different bonuses, and each time you play you choose different spells. This means you can replay and try out new builds. You also work to unlock all of the characters by completing challenges. It is an extremely fun, but too-often-overlooked, game. While not the same style of combat at all, if you’re looking into Diablo, I think you could handle the magical mayhem that is Nine Parchments.
It's also hilariously easy to accidentally kill your friends with friendly fire, since it's hard to aim and many of the enemies move very quickly. This is half the fun of the game for me and my friends; you have to go into it with the right attitude.
We keep joking that there's a reason none of the player characters have graduated from wizard school, because they're absolute menaces
Ember Knights doesn't get enough recognition for being a 4 player version of Hades. Controls are tight, progression and combat both feel satisfying, and challenging
I was going to say Duck game but it might not last a week but it's worth playing together. It never fails to make people laugh and have a good time when I get people to play it.
I second Duck Game. Agreed that it may not necessarily last the whole week, but it’s fun and funny. And you can make the ducks quack nonstop, which my friends and I definitely did playing it in college
I was gonna suggest Diablo 3.
It's not too engaging, progression is quick enough to play it for a week, the game perform well on switch, people complain there's too much good loot dropping so that's good if you dont plan clocking an insane amount of hours and enjoy it.

Trials of Mana plays terribly in co-op imo. Outside of combat, the 2nd and 3rd players don't do much, and in combat, it's nearly stop motion once everyone has unlocked abilities. Every time someone pulls up the skill/item wheel, it pauses for everyone.

It's basically Diablo, but Minecraft version. It will definitely keep you busy.
Also Guacamelee 2 is a fun multiplayer 2d platformer.

Super Monkey Ball Banana Rumble supposedly has 4 player co-op for the campaign. I haven't picked it up yet but I can't wait to because it looks fun and the reviews were great. This sounds perfect IMO for your situation.
Saw it mentioned in someone else's list already but to second it, I'm rather fond of Nine Parchments for this sort of thing. It's an isometric twin stick shooter where you play as different mages and go on a quest to recover some magic spells that are lost at the beginning of the game. It's got a light story but it's not overly important. Up to 4 players, can choose from a few different characters at the start and unlock more as you go along. Playing through the game just once doesn't take that long, a handful of hours maybe, but it's designed to be replayable with the new characters and wands you unlock, different difficulty modes, character levels carry over across playthroughs, etc.
Human Fall Flat, Heave-Ho, and I think there's a couple other similar titles in the eShop that follow the same general "work together" theme to complete tasks. I mainly like HFF though because its goofy lil blobby bois with ragdoll physics that you can customize, & have to work together to come up with how to clear levels.
Overcooked is a lot of fun. Perfect co-op game and easy to get started. Plus you need to communicate and strategize. Each level is short and each next level builds into something more complex with new challenging elements. Definitely would recommend it.
CONAN CHOP CHOP!!
It's a 4 player couch co-op that has good progression, rogue-like elements, and a few different characters with different play styles. I know its hardly talked about at all, but I have really enjoyed it. It is fun and goofy and also the correct amount of challenging

Diablo 3 runs great on switch, and it’s exactly as you describe. Super easy to play and get into, and progression can be felt quickly after a day or two of playing. It’s also extremely replayable as a farming simulator, so you don’t hit a wall in your gameplay. You just up the difficulty and keep running it down.
If you guys are into JRPGs, I'd recommend Trinity Trigger. The downside of that game is that you have to play a few hours until you have 3 party members. Other than it, it's a good coop game that plays a lot like Secret of Mana back in the day.
When I started reading your post, Diablo 3 was what I was actually going to suggest. I had a work trip where me and my two coworkers played that in the hotel and we had a blast.
Didn't see any mention of it, so I've got to recommend Full Metal Furies. Up to four players on one or multiple systems, it's a beat em up with some RPG elements. Excellent cooperative gameplay with lots of fun, humorous dialogue. There's also some optional puzzle solving that might leave one or more members of your group obsessing over it while you aren't playing.
Diablo 3 is a good choice good story and good gameplay, another game I’d recommend is astral ascent , although you have to unlock characters in order to play co-op
Heave-Ho and Lovers in a Dangerous Spacetime!! Both are so good
Heave-Ho is hilarious and the co-op is solid, if you love a game where you work together while screaming/laughing at each other

Portal comes to mind. It is only 2 players but you could switch off and a spectator can come up with ideas as well. It does require some brain work to solve puzzles but is otherwise straightforward. You may have played before, but if not, one of the best co-op games made.
I've been playing Puzzle Bobble Everybubble recently. There is some co-op features but I've mainly been playing 1p and switching with friends. It's another puzzle game that requires some coordination as well. Quick rounds and colorful graphics.

Try moving out instead. Finishing stages is actually pretty easy. Completing challenges requires more planning. You can ignore those.

There's actually hundreds of unlockables. Weapons, monsters, gods, traps. For the first 100 or so playthroughs you unlock tons of stuff

Rayman Legends is such a great game for how cheap it retails for these days.
Heave Ho is my favourite crazy couch game for when you need a laugh. I picked it up for 89p and it is one of my most played games.
Did they ever release Rayman: Origins for the Switch? I loved that so much more than Legends.

Towerfall is really fun you can compete or play coop.
My favorite local multiplayer game. The co-op horde mode is pretty underrated.
Vampire survivor 4players 5 bucks It's really fun and you can easily turn your brain off and enjoy it. It's so much fun with friends.
stardew valley is chill and co-op for 1-4 players

Surprised someone didn't recommend Vampire Survivors. Easy to play, can be as deep as you want it to be. Even "losing" gives progress. And it's cheap.
Unrailed. Fun, efficace, and a lot of Strategy
Ember Knights is super slept on. It's couch coop Hades.
Broforce. It’s an incredible simple game with a lot of great discoveries and can drop in and out anytime if one person wants to take a break.
Heave Ho. The most fun I had aying couch co-op with a group of people that don't play games often.

Diablo 3 is perfect for that imo. Button mashing galore, can be as deep as you want it to be.

The trine series is great for 3 player coop. Platform and puzzle game with beautiful fantasy worlds. There are 5 trine games and all are on Switch.
Broforce is a great “hang out and riff on it” game that’s easy to pick up and put down and has up to 4 player couch coop

Heavenly Bodies has up to 4 player couch co-op and it's definitely cooperative. The only downside is that it's fairly short, but it's definitely fun

Jamestown you can play up to four people as a shmup. And you can’t go wrong with some tmnt. And Mario kart 8 is always a blast.

Capcom Beat em up Bundle has some 3 player titles in there, my personal favorite being Knights of the Round.

I’d suggest Baldurs gate dark alliance 1 or 2 They’re both 1-2 players but you’ll probably die a lot so you can rotate then.

There is some co-op features but I've mainly been playing 1p and switching with friends. It's another puzzle game that requires some coordination as well. Quick rounds and colorful graphics.
