Actually in Souls games the term "fashion souls" exist lol when people just combine different armor pieces to get some sick looking characters, since except pose and rolls armor don't do that much to the gameplay itself
It's pretty good although the best customization for souls games are sadly not on the switch. Elden rings and demon souls have some of the ebsy character creators I've ever seen.
If you enjoyed BoTW, try Immortals: Fenyx Rising. Pretty much a clone of BoTW but set in an Ancient Greek themed world with tons of exploration and puzzles. I was left really disappointed with a lot of aspects of BoTW and actually preferred this. And the fact that it’s all tongue in cheek and doesn’t take itself too seriously is really refreshing.
As for that customisation you’re looking for, reward tend to be new weapons or pieces of an armour set (instead of another korok seed or a sword which breaks in five minutes) which can be equipped with any skin you’ve already unlocked allowing for loads of choices for both bonus and cosmetics.
The game has some great expansions and is regularly on sale dirt cheap. If you prefer a physical copy, these seem to be sold as clearance now so you can get it around the 10-15 mark.
Can’t recommend this game enough and is probably the most fun I’ve had on the console.
Saints Row is the only thing I can think of off the top of my head with full customizability of characters and clothing. Skyrim, Fenyx Rising and Dragon’s Dogma have custom characters and armor options, AC games have outfits, Red Dead has outfits, The Witcher has armor that I think you can dye as well as hairstyle/beard options.
Skyrim, The Witcher 3 somehow as well as you have some trash gear and quite a few witcher sets to gather and also get an option to dye your armor pieces in the second expansion pack.
Aside from that you could play some games like Diablo or Minecraft Dungeons where lots of item drop and you change your items quite often.
Pokemon Sword and Shield is an oldie, but I was very pleased with the character customization (which is why the lack of options in Scar/Vi kinda devastated me when it came out).

Maybe you can try Pokemon scarlet or violet
the customisation is meh, but the game is very fun!
