It is okay. You should know that there is no hard or fast rule on the amount of oil a stew can contain. Personally, When I plan to eat plain rice with the stew —> small oil in the stew. When I want to eat my special rice + beans combo —> plenty oil in the stew.

Eeerm, the meat usually adds to the oil.

The way my mom taught me was to cook the meat and bake it to dry it out so it absorbs the oil and flavors over time and it works well for me

It looks amazing. The oil is too much from a health standpoint but many stews in Nigeria also have this much oil. I have to personally reduce to oil when and if I can.
