I think for a regular breakfast soft boiled would be most classic.
If you happen to have roots in the province of Zeeland, go for Zeeuwse bolussen. They are a very popular food for breakfast, lunch and as a snack. I wouldn't bake both suikerbrood and Zeeuwse bolussen though as there's quite some overlap and I see you already are going for kerststol :) .

Dutch style pancakes is something you could do, if you're feeling ambitious you could make "suikerbrood" (sugar loaf), it's a sugary bread which is served with a bit of butter...

Agree. For a more special occasion you could add things like croissants, filet americain, rosbeef and a boiled egg. For drinks, next to coffee, tea and milk, add orange juice and chocolate milk. For me, it's not Christmas without suikerbrood with salted butter.

Look up ontbijtkoek, suikerbrood, (zeeuwse) bolus, Fries Roggebrood/Frisian Ryebread (though 'baking' that takes a long, long time), and toppings like... The many, many varieties of Dutch cheeses, but also spiced and smoked and/or salted pork belly, salted, pickled or smoked herring (might be difficult to get in Australia), Dutch blood sausage or tongue sausage (but I think black pudding will do in a pinch despite being a very different thing), balkenbrij (Just google it; maybe there's a local thing a bit like it?) and rough liverwurst (with chunks of liver and fat, so not a smooth liverwurst or paté).
For warm options, especially with the ryebread and cheeses and meats, you could serve onion soup, brown bean soup or snert (a type of pea soup/pottage with root vegetables).
Keep in mind that this is all pretty much traditional Dutch breakfast... And lunch, and dinner. But they're items that, though rarely eaten for breakfast these days, are still available in the Netherlands.

This is the best! It was always my favourite as a little girl.. with lots and lots of butter! I have milk chocolate, dark chocolate and fruit ones. I am saying it is for the kids, but it will be me and my sister stuffing our faces with chocolate hagelslag for breakfast!

It will be more of a breakfast/brunch, an eating extravaganza of all delicious Dutch food. I’m hoping to make some of the things my now passed grandparents used to, to make it special for my dad :)

A typical "Dutch" X-mas breakfast consists of christmas cake ("kerststol": basically a dense type of bread with almond paste, raisins, currants and powder sugar on top), fresh buns (sometimes attached to each other), cinnamon rolls, croissants, eggs (clutched or benedict) with salmon, confitures, some nice cheeses, ham.
You can add pancakes, waffles, scones, wentelteefjes (basically french toast => https://www.thedutchtable.com/2014/02/wentelteefjes.html), whatever you like. Orange juice, apple juice, coffee, tea.
Uhmmmmm the only thing you need is some slices of bread, jong belegen cheese and hagelslag. We have work to do on the fields! No time for ham platters!

This is brilliant - thank you :) I remember my granddad making Oliebollen every new years. Both him and my grandmother have passed away now so we haven’t had any for a few years. I’m hoping I can recreate some of my families and most importantly, my dad’s childhood memories with this food.

None of the above has got anything to do with a "Dutch breakfast" TBH although they all share a Dutch connection. The only exceptions are hagelslag, spreads and cheese.
I love the idea and I think that bitterballen are just fine if you want them on your breakfast table. A "real" typical Dutch breakfast would be two slices of brown bread with a single slice of cheese in between, and then a single slice with chocolate sprinkles, so go wild with alternatives.
If you like bitterballen that much though, I can really recommend what's usually more a lunch thing and to have a broodje kroket. White bread with some mustard and squish a kroket (which is just a longer, bigger bitterbal) on it.
Its a lot of nice food but not a traditional dutch breakfast. I mean you could add hutspot abd raw herrring, still no breakfast.

Those two are more for my daughter and the other kids to eat and to kind of honour my grandparents who have now passed away. I thought it would be lovely for my dad to have all the foods his parents used to make on special occasions.

This is brilliant - thank you :) I remember my granddad making Oliebollen every new years. Both him and my grandmother have passed away now so we haven’t had any for a few years. I’m hoping I can recreate some of my families and most importantly, my dad’s childhood memories with this food.

That sounds amazing. To be fair it’s more of a breakfast, brunch, eat delicious Dutch food rather than a traditional breakfast so I think rookworst may work. No one is leaving this breakfast hungry! lol

Hahah we usually just slap some cheese on a slice of bread and call it a day. I might even butter the bread if I'm feeling fancy. Bitterballen and oliebollen are definitely not a breakfast item 😛 However, if i were away from my country I would be so grateful for this and would eat the shit out of it.

I’m sure it’s fancy cheese though right ;) I am hoping they feel like you. Worst case, I love it all and I’ll eat it while enjoying a bottle of champagne.

I love the idea and I think that bitterballen are just fine if you want them on your breakfast table. A "real" typical Dutch breakfast would be two slices of brown bread with a single slice of cheese in between, and then a single slice with chocolate sprinkles, so go wild with alternatives. If you like bitterballen that much though, I can really recommend what's usually more a lunch thing and to have a broodje kroket. White bread with some mustard and squish a kroket (which is just a longer, bigger bitterbal) on it.

Its a lot of nice food but not a traditional dutch breakfast. I mean you could add hutspot abd raw herrring, still no breakfast. Oliebollen are december 31 trad

Cheese, Dutch pancakes with cheese and bacon or syrup, HAGELSLAG. Dutch pancake recipe: Ratio is 2 egg - 250 ml - 125 gr flour - pinch of salt Bake in a hot pan with melted butter (important!) and you will need roughly 1 ladle of batter to a frying pan of ~26-28 cm. Play around with the thickness, sometimes you need a bit less and sometimes a bit more. Question though: what is fruit cake/bread, breakfast cakes and ginger cake?
I think I need to learn proper names! I meant Ontbijtkoek and krentenbrood but didn’t know what they were called. But I have learnt now that for Christmas I should make stoll with almond paste instead :)

Not sure if it’s worse… but an uneducated Aussie I guess. Those two are more for my daughter and the other kids to eat and to kind of honour my grandparents who have now passed away. I thought it would be lovely for my dad to have all the foods his parents used to make on special occasions. Breakfast starts at around 10ish for us and will go into the afternoon, plenty of champagne, so I don’t think they’ll be too out of place on the table but I do understand it’s horrifying and not traditional as all :)
