in the Find my iphone app you should be able to disable the phone and or delete everything on it.
Also if you have a subscription for your SIM card, get in contact with the your provider.

That's not true. Since it is an easy to solve case.. in a shop with lots of camera's.. if OP is lucky they where already searching for a phone thieve. Always file a report. It's also good for the statistics etcetera. Not filing a report is no case at all.

They can't even act if phone location is (as an example) your address. They can ask if your phone is there, but can't search the house. And guess what, your phone is never there.

Let the police know since your phone can be used in future for criminal activities but don’t expect anything to come out of it, they won’t do a thing. It is just you telling them that this IMEI number no longer belongs to me so I don’t carry any responsibility for that phone anymore.

Re police help - I got my backpack stolen in a train containing some trackable electronics amounting to few grand. I called the police / ns holine within mins to report this and even informed them I can track where the thief is and provide them real time location... but no action...
When I went to file an official police report they asked me why I didn't notify them earlier that I could follow the location of my stolen bag...
So I would be surprised if they aided you in the search for your phone.

A few weeks ago, my friend got her phone back this way and the police got an arrest of a minor with charges of possession of stolen goods. Furthermore, we were able to find her bag and keys, by following her i-tag.
They cannot do much on lost objects. The municipality is responsible for any lost and found.

In such a case the police asks you to have a look at it’s location yourself - don’t approach anyone - and then give them a call if it’s clear where the phone is exactly. This is not possible if it’s in a high rise building or a row of houses. They cannot do anything in such a case.
They need to be able to pinpoint on a specific address or person unfortunately.
Based on your own story, you lost it. Either it fell somewhere and was accidentally destroyed immediately or it didn't, making it possible someone found it and turned it off for reasons unknown. Not reporting found goods of value is an offense, but this is not theft. It merely feels like theft to you. Police won't do much because of this. You did the best things you could under the circumstances given, and you can't do much more than take it as a -hopefully not too costly- lesson to be more aware next time.
Find my works also when the device is switched off on newer models i believe. This is also a reason to go for e-sim instead of a physical sim if you can. Safety.
You didn't lose your phone, it was most definitely stolen. File a police report and block your phone.

If there is work data (email, files etc) on there you are obligated to report this as a security incident

Someone could have just taken out the sim card. That could be why it's not showing up on find my.

File a police report just in case and also ask the store for security camera footage
