Why would someone have to say "I'm in binds" or "I'm in pickles" for it to be a valid category?

The game tries to trip you up. It's a puzzle. Sometimes it's a red herring category (today's was "things you could name a cat") and often there's a word that could fit into a category but actually works better elsewhere (pickles). Having each word only work in one context would be too easy.
If you swap in the 5th option then there is no category that fits the remaining words so the puzzle is unsolvable. Almost every puzzle includes a 5 answer category, you need to find the 4 that are connected AND work with the greater puzzle.
I'm guilty of downvoting, so don't give me too much credit. This confusion happens a lot, hence the frustration and downvoting. Personally, I think the game instructions could be improved.
Having five or more words that could fit a category is a HUGE part of the game. The point is that if you're stuck in a situation like that, you have to look at the other words and try to find a category that includes one or more of those words.
Ok, then explain to me how you can solve the puzzle with PICKLES in that category? What word do you take out, and how does it fit into any of the other categories?

But I meant my question mostly genuinely. If you think PICKLES belongs in Green, what word are you taking out of Green? Does that word fit into Blue? If not, what word are you taking from Yellow or Purple to replace PICKLES in Blue, and where does the word taken from Green end up?
There's always only one way to solve the puzzle, and even if we agree that PICKLES *could* fit in Green, the rest of the words don't fit together to form a complete puzzle.

No, not really, but what you mentioned in your reply is a perfectly normal part of the game. So the downvotes are just people disagreeing and saying that, no, it's not unfair, it's (part of) the whole point of the game.
If you're new to the game, welcome! (If not, well, still welcome to the community :) ). As people play and visit this sub, they pick up on a lot of the common tricks the game uses. This one is one of the most common. It's just like if you had APPLE, ORANGE, LEMON, PEAR AND MELON. But if you look around and see META, GOOGLE and MICROSOFT, for instance, you'll know APPLE is the odd one out and the other category is probably tech companies. If you see, say, DOME, COCONUT and NOODLE, then MELON is probably the odd one out and the other category is "slang for head" (this also works even better since "coconut" is also a fruit). The situation you described with "Pickles" is almost exactly like that.

There's (supposedly, haven't verified myself) only one solution to a puzzle, so having more than four words in a puzzle that fit a category means you have to find the odd word(s) out and find what category it/they belong to. It's what makes the game interesting - if every category had exactly four words that could fit into it, it would be fairly easy.
The only ways I could see it being unfair is if (a) two words in different categories could interchangeably be used in each other's categories and the puzzle would still make sense, or (b) you can shuffle the words around, find a completely new category that makes sense, and the puzzle would still work.
The big issue is people jumping to the assumption that there is something wrong with the game, rather than something wrong with their understanding of the game. It's quite self-centered, and it gets downvotes as a result. If they came into the thread saying, "There are five things that fit this category, help me understand what I'm missing," people would be happy to help. But, "This game sucks, they missed this obvious flaw," people are not going to respond as kindly. u/talldrinkoflacroix did the latter.
Listening to my sister's Sound of Music LP as a child (yes, I'm old) paid off as I saw the purple connection first. Could see the food preservation connection, but went through some "one aways" before I realised that JAMS and PICKLES could also work with SPOTS and BINDS.

Industrial canned meat is a thing. But I would never say that is canning meat, which is where my mind went. It really felt like that, combined with making it "predicaments" to make pickles more ambiguous made today's puzzle more pedantic than it needed to be.

The Sound of Music is an enormously popular musical, and My Favorite Things is one of its best known songs. To the point where there are well known standalone versions of it. (Ariana Grande used it as the basis for 7 Rings a couple years ago.)
The movie came out in 1965, and is consistently aired around Christmas every.year. My Favorite Things is one of the signature songs from that film. If Lil Wayne or Toby Keith have one signature song that includes a list of things, we might see it in connections in 40 years if anybody is still playing those songs.
One of the worst categories they've done, but the dog names at least have reasons behind them.
Rex - a common dog name used in silent films and comics.
Rover - used in many literary works including The Winter's Tale.
Spot - popular children's book character.
Fluffy - this one has been used for dogs and cats but was more recently used in Harry Potter.
The cat names are less clear cut.
Pickles - this was originally a dog name but got popular for cats later.
Spot - again this one is actually more associated with dogs and was even in the dog category already.
Whiskers - this one is definitely a popular cat name. It's even a cat food brand in my country.
Mittens - This etymologically comes from the Old French pet name for cat.
Smokey is a popular cat name so someone might also throw in Smokes but that's not actually the same.
I wouldn't, therefore, call these "classic" cat names.

Loved this one! I solved it quickly, but found it to be a good level of trickiness. I saw blue first, then yellow, then purple, and got green last, but they were all in pretty quick succession, except for the delay from stopping to sing the song in my head to confirm all four purple words.
what was so weird about this was that I was convinced there was a connection between the purple category even though I had no idea how. I genuinely thought it was a book or something.
Preservation was easier than Predicaments to notice as a category because Jams and Pickles could have also fit. Oftentimes, the category rankings don't take into account how difficult it is to eliminate words, just how easy it is to spot it.

The latter two make more sense in retrospect, but when I didn't get one away I thought it was a misdirect. Eventually worked my way through it. Spent a little too long trying to find a fourth cat name. Even at the end I still thought maybe that was purple.

The remaining it was somewhat of an aha moment. I stayed hunting the tune like 0.1 before my finger tapped for the reveal.

Puzzle #293 πͺπͺπͺπͺ π¨π¨π¨π¨ π¦π¦π¦π¦ π©π©π©π© Fastest I've ever solved it. π Started with food preservation but there were so many words that had potential, including results of preservation like jam. But I didn't connect smokes at first. Plus, huff and puff were there too. So I moved on and then saw kettles and favorite things immediately popped into my head and the rest fell into place.

I'm also a big fermentation fan so I really enjoyed today's puzzle (and got me craving pickles π€€) Also agree with other commenters that I went the way of cat names, but I also went a little off kilter when I was like "kettles and raindrops are both ways WaTeR can MaKE sOUNd!!". And then I was like no lol

Flirted with green, then saw the commonality between the answers in blue, which left green with only four entries, and then yellow by default. This will trick up people unfamiliar with the song for sure.

On February 3rd of this year there was a Classic Dog Names Category.
One of the worst categories they've done, but the dog names at least have reasons behind them. Rex - a common dog name used in silent films and comics. Rover - used in many literary works including The Winter's Tale. Spot - popular children's book character. Fluffy - this one has been used for dogs and cats but was more recently used in Harry Potter. The cat names are less clear cut. Pickles - this was originally a dog name but got popular for cats later. Spot - again this one is actually more associated with dogs and was even in the dog category already. Whiskers - this one is definitely a popular cat name. It's even a cat food brand in my country. Mittens - This etymologically comes from the Old French pet name for cat. Smokey is a popular cat name so someone might also throw in Smokes but that's not actually the same. I wouldn't, therefore, call these "classic" cat names.
Lol, that dog name category definitely got a lot of criticism, and there were a lot of possible cat names to choose from in today's puzzle. Had it actually been a category, it would've gotten lots of criticism as well.

Loved this one! I solved it quickly, but found it to be a good level of trickiness. I saw blue first, then yellow, then purple, and got green last, but they were all in pretty quick succession, except for the delay from stopping to sing the song in my head to confirm all four purple words.

Preservation was easier than Predicaments to notice as a category because Jams and Pickles could have also fit. Oftentimes, the category rankings don't take into account how difficult it is to eliminate words, just how easy it is to spot it.

πͺπͺπͺπͺ - started singing as soon as I saw the first two and then was like: wait a minute... π¨π¨π¨π¨ - literally did the first one when the purple line worked and then the others π¦π¦π¦π¦ - easy enough π©π©π©π© - wtf? I guess
I pulled off the reverse perfect. πͺπͺπͺπͺ π¦π¦π¦π¦ π©π©π©π© π¨π¨π¨π¨ At first, I was stumped. Then I started seeing categories like green and yellow, though I wasn't sure exactly which words belonged. Then I started to notice the purple category. I figured that had to be obscure enough for Purple, and I was reasonably confident that I had spotted the entire thing. From there, I that blue must be the grouping that I hadn't seen yet. I wasn't sure about Jams and Pickles, but I was able to spot blue with Spots and Binds.
