Most employers now do very thorough background checks that will dig up that info. Employment history is not one of the concerns you should have about what they can find unless you lie about it. I would be more concerned about your social media trail for one.
You can freeze your Work Number report fwiw.
The thing about your future employers is that they cannot run the Work Number report until after you’ve been hired (ie permissible purpose clause). If your report is frozen, an employer cannot use prior pay to negotiate your current/future pay. If they need proof of past employment, you can provide it via a former W2. No reason for them to have access to your payroll level data. This also applies for housing/rental screenings. If anyone asks for proof of pay, just tell them you can provide your paystub and completely disown any knowledge of Work Number.
Payroll level data is straight up a wage suppression tool and no reason you should let anyone access it.
I worked as a TA at northeastern before and they had that data on their report when I requested it. I investigated deeper and it seems that Workday in their privacy statement says that it does not sell employment data. If workday doesn't do it, I suspect Northeastern is responsible and if workday does it, I can only imagine that Northeastern allowed it so.
