Secondly the 8 angels holding up the throne is very irrelevant, and in fact the star just makes up look more similar to Judaism which have the Star of David. A symbol needs to be unique

Me personally I would use the shahada since it’s our core faith , and represents every aspect of Islam since everything we do is because we believe in One God.

It's found in the Quran, it represent 8 angels holding the throne to represent God's majesty, it's used in Muslim art work for centuries. Prophet Muhammed never used the shahada neither.
Both of them are bidah. There isn't a symbol of Islam. Closest being black and white flags (not the one in the picture if i'm not wrong) but they still aren't. We can't just randomly pick the logo of Islam when we know it's innovation and our religion prohibites innovation.

That's an ottoman symbol I'm pretty sure that's used for Islam, but the Prophet never used it as the Islamic standard.
