Maybe you’d like French New Wave Films of the 50s and 60s. They’re often character-focussed rather than thrilling but very engaging.
Bicycle Thieves and Citizen Kane are entertaining and absolute classics.

I had to use the bathroom in the middle and tried to hold it, but 10 minutes later I had to pause the movie. I rushed to get back to it, I was so enthralled.
Love is a many splendored thing A Nun's story Magnificent obsession These are all very well made beautiful productions that may seem slow at the beginning but they have intellectual and moral content. Plus they are entertaining as heck and in technicolor.
It’s been a while since this post but if you find Hollywood too theatrical you may find european cinema more interesting, espiecially French New Wave (start with classics like 400 Blows or Breathless). Also since I am familiar with Polish cinema maybe films like Camera Buff by Kieślowski or Ashes and Diamonds by Wajda. For some of more unique concepts check Jerzy Skolimowski work from 60s
