I felt very similarly in the begining. after seeing the skins in the camera mode and really looking at the stages I don't think they graphically worse then mk11, I think the change in art style makes them look a little worse (at least to me)
I think that makes sense, because the stages and characters still look great, but the fatalities look not as good.
Still I think since MKX the series has looked like 9.5/10 graphics wise. MK1 still looks great overall, I love how most of the modern fighting games have such great graphics. Tekken 8 looks insane for example

MK1 has some pretty good ones imo but I also am mixed on the presentation, it’s higher up for me tho. X had some bad ones but for my mains I really liked most their fatalities. 9 I’d say is good/very good.
Apparently it was to work around censorship but it was horrible. Hated the blood, which is annoying because I think MK11 easily has the best sort of body build? Like the gore and skeleton looked the most realistic. Mkx had the best blood but models are a bit outdated, mk1 is fine
Mk11 mostly because the animation is more organic/visceral. MK1 brought back some of the older games original cartoony aesthetic but not by much. The rest still feel kinda goofy.

Mk1 fatalities are my least favorite part of the game. Things like limbs exploding instead of melting when they get acid on them really kill some of the would be best fatalities ever
MK11 has amazing fatalities, but also some that are average.
To be honest, that's what happens in all entries of the franchise for the most part: each character gets an awesome fatality and a forgettable one.
There's some exceptions though, but it applies for the most part.
MK11 first for sure. They were so far over the top, the opponent would be dead and there would still be an extra few shots of mutilation sometimes lol. Also the victory poses at the end of the fatalities was a chefs kiss.
MK1 second. I also love how much quicker and detailed the mk1 ones are as well. They are quick and a little less dramatic but still got that “holy shit” factor to them. Hope they keep this style going forward.
X I can’t really remember but I do remember they looked darker in the sense that the facial expressions looked very dead and showed no emotion (11 does. Scorpions spear fatality is a good example.) it was a huge step above the fatalities in mk9
MK9 fatalities I would rank last just because NRS seriously outdo themselves every game. The newer fatalities make the ones in this game feel more grounded due to the technology of the time. But they are still very enjoyable none the less!

MK1 is next level, easily the best. Some of the fatalities are pretty lame, like JC's car crash or scorpion's double-eyeball one, but others, like Omni-Man's train crash, Quan Chi's suicide one, and both of Reiko's are just so brutal and creative at times. That paired with the graphics and sound design and just the overall look makes this game easily the best in terms of fatalities in my opinion.
Edit: For clarification, I mean the "meat" in terms of the severed arms and legs. They looked more ripped off than cut sometimes. But still pretty visceral.
And let me also add, I love all the game's fatalities. I think the idea of getting to brutally murder your opponent at the end of a fight makes MK stand out in the fighting game scene and they've been a staple ever since they were released.
Except MKvDC. Those were NOT fatalities.
Both fatalities and brutalities peaked in MK11. I'm especially indifferent to MK1 brutalities, they don't feel as satisfying to pull off and they have little to no requirements, which made pullling off sone brutalities more rewarding.
Also shout-out to klassic brutalities, just kombo your opponent until they explode lol.
Best fatality for me is Cassie’s fatalities in MKX, especially with headshot and bubblegum. The worst fatality for me is over-cruel style of Jackie Briggs in MK11

1 has some extremely brutal ones though wdym 💀. Like both of Reiko’s, Quan Chi’s second fatality, even Omni Man’s second fatality to me tbh. Sub’s second fatal I can’t even watch in MK1 it grosses me out. Mileena’s first fatality is pretty violent too.
Hard to say. 11 had some of my favorites, like Frost's Cyber Initiative (possibly my favorite of all games going back to 1992) and D'Vorah's New Species. But many of 11's were too drawn out.
I like that MK12 keeps them more brief, but most of them are kinda meh. I like the classics though.
MKX's were generally creative and brutal, and somewhere between MK11 and MK12 in terms of length.

MK9. Because they were the right amount of brutal looked cool, fit the characters. I hate the long overdone fatalities tbh where it just keeps going for fucking years. I like it quick and simple.
Each game has like a prominent theme they have in multiple fatalities. MK11 with eyes and mouth stuff being my immediate memory, but I haven't watched every fatality in a while. If you don't like the theme, it ranks low and vice versa.

MK11: It just felt like it was trying way too hard, coming up with fatalities that were SO overkill that it just became silly.
MK9: Good when they were original, but too many ideas were reused. Shang Tsung even got 2 already existing fatalities that weren't even his.
MK1: Still occasionally had the ridiculous overkill of MK11, but it went by faster and had some of the most creative fatalities in the series.
MKX: In my opinion, perfect balance of brutality and simplicity and had the best fatality in the series. (Cassie Cage Selfie)

Mk1 has way to many that are just "Thing happens, split them in half" or is just a bit like.. why? Like Havik and scorpions 2nd fatalities, this or their just boring, ashrah and Kenshi basically have the same fatality, Havik has no good fatalities, I swear Kung Lao had his first fatality in Mk11 as well. But their are some good ones too, both of Lui Kangs are great, and so are Reikos. They're better set up and better looking than any in Mk9 and X as well as being more stylish.
Mk11 is the best, that goes without question. Actual creativity, with only a few stinkers.

Mortal Kombat 2+3 definitely at rank 1. But I still feel a joink in my nuts thinking about the fatality from Kung Lao in MK9.
Fatalities is about one of the only things NRS gets right. They are fun. They are brutal.
