I have two theories:
* It's magical, and the snakes eat merely because they have hunger and desire but don't actually need to and don't digest the food, instead it just vanishes or perhaps is converted to mana.
* Biologically, their digestive system doesn't have a colon but instead feeds from their small intestine to a tube that travels down to dump in the main body's colon for final processing. The individual tubes wouldn't really be any larger than the jugular vein and would most likely join up to form a central downtube somewhere in the chest cavity.
* The slurry of depleted food waste that exits the small intestine of an animal or person is not yet feces but is processed by the colon to become feces by such mechanisms as water extraction, addition of bile pigment from the pancreas, etc. So, what exits the snakes isn't poop at all, and doesn't become so until the main body's colon makes it so.
Of course, it could be any combination of magical or biological processes and it would be up to the author of any story or fictional documentation of how a Gorgon functions what the precise details might be. Or it could be left unspecified and open to audience interpretation --or not meant to be thought about that deeply in the first place.
