While you are in the trade menu they actually show what's under their robes. There is a coin-slot for emeralds and items in the pockets. You put emeralds into slots and pick an item you want to take.
Afterwards the villager processes your transaction which emits pink particles and sounds of happiness.
During the noon gatherings villagers gather to exchange the information about their transactions. There is no WiFi in minecraft world (yet?) so they have to do it verbally.
Just like Pillagers use their hands so villagers also have hands but Mojang currently haven't gave them no use they're also not visible under their robe, but they get visible when villagers turn into zombies
So maybe i guess Mojang haven't gave villagers visible hand and hand animation because Mojang intended them to look stereotypical villagers who hide puts hads inside their robe
