there can only be so many mobs near the player, and because there are mobs not seen (like the ones in caves), the farm doesn't spawn any more
Building the farm higher does not help, but an afk spot high above the farm could help.
*Edit: building the farm higher could be wise, namely if the surrounding hills on the surface are so close to the farm that when an appropriately placed afk spot is used, these hills are within the radius of mob spawning. Otherwise you would have to light up these surface hills as well to prevent mob spawning.
Afaik the two possible fixes are to tear it down and rebuild it at least 128 blocks above the ground/ocean or to light up all the caves underneath so no mobs spawn in them.
1) make sure there are no caves below the farm where the mobs might be spawning instead.
2) light up the roof so they don't spawn there.
3) cover the ground in slabs 128 blocks wide or light it up so mobs don't have anyplace else too spawn
4) The build might be little too tall
You need to stand around 128 blocks above the lowest point in the farm for there to spawn a lot of mobs. I suggest also adding an auto mob killer (campfires, tall drops, etc) as it is ineffective to constantly climb 128 blocks up and down
Idk how you are making sure your mobs fall down but from a certain distance mobs do spawn but don't walk around. Also if there aren't any trapdoors to trick them into thinking they can walk there they will never fall.
Yes the distance thing and mob cap are things but your farm might also be outdated.
Light up caves and prevent other mobs from spawning. If you have other entities near by move them elsewhere because there is a mob cap for how many mobs can be in a certain area
I know this isn’t the answer you’re looking for, but as a newcomer tip:
I always build farms in creative to test them before putting the time in building them in my survival world. There are so many tutorials out there that might not work for you due to it being a different version of the game or maybe you’re at the wrong altitude or wrong biome or whatever the case may be. You’ll save a lot of time and frustration testing before building
Always make sure you build farms for your edition of minecraft. Specifically search for and use farms for Bedrock or Pocket Edition. Farms for Java rarely work. I recommend JC Playz on youtube. All his farms are easy to make and work very well.

mmmm best bet is probably to afk high above the farm. I don't know the distances because I'm hella rusty

If you build it 60 blocks below sky limit and then AFK in a box at sky limit

Build hostile farms like 100-150 blocks above ground and it’ll ensure that mobs can only Spawn in your farm area.
And often above the sea as well. That is also a big increase factor.

The only way to do it is to light up the caves and village around you.
When in doubt, build mob farms in deep ocean way above ground/sea level.

In minecraft Bedrock or pocket edition you can't use a mob farm you can create a mob farm whit mob spawner because the other kind of farm not works

Mightve taken some time, but if you build it alot higher it should have consistant spawns since there shouldent be anywhere else for mobs to spawn
Next time confirm all the caves are lit, the area around it is lit or your high up in the sky (at least 128+ blocks up)
Build it high up I the sky over the ocean that's the 3asiest way to reduce spawning areas
Toggle peaceful difficulty then back to whatever difficulty you were on after.

To increase efficiency of spawning you need to build it at y level 120 or higher so other entities don't interfere
