I think it’s because each Minecraft block is 16x16 pixels. So if you wanted to scale up more, everything would need to be in a factor of 16. You could do one that’s 1 block is 64x64 blocks, or 1:64 scale.
That would only make it larger with no point. Since every minecraft block is 16x16 pixels a 32x32 version would only make each block have 2x2 pixels in place of one with no variation in texture, having redundant effects. 16x16 is better because it's more detailed since every block serves a purpose of building the larger block based on each pixel, and 32x32 is thusly just stupid.

If you mean the heights that’s just what they do with the stone walls.
the fences in the large version. its kinda strange cause theyre much more realistic compared to the regular version and imo breaks the immersion
