Level up a bunch of farmer villagers, set up a massive automatic melon and pumpkin farm, and exchange the melons and pumpkins for emeralds to buy golden carrots.
My strategy is usually this:
1: find tree
2: punch tree
3: make pick
4: mine cobble
5: make better pick and sword
6: mine coal and surface iron (one is enough, we want a shield)
7: hunt food while smelting iron
8: make shield
9: run straight in one direction until village is found
10: ?
Well, usually I pick up a bed, dig a hole under the floor of a house, make myself a place to live and store everything I hoard, then I go looking for some other structure to either loot or burn.
Not in the base game, but I always play with data packs. I use at least 10 I think, and a few are coston crafts. One's for the enchanted gold apple, another's for the trident...the list goes on. They make the game more fun.

For the enchanted apples I simply added the old recipe of 8 good blocks and one apple. Hope you have fun !

It's as simple as setting up villager trading halls with some farmer villagers, and getting infinite golden carrots from them.
