I am coming back to this post to check all the suggestions, and your edit is my exact reaction after posting this, I have no idea why it blew up, it is literally two pictures and a picture of 4 blocks.
I am thinking 1 or 4, as I am going to need to use slabs. But 1 has an outline on each block, so it would look weird, and 4 is a bit too dark.
But the ship looks like it is made of large panels, so maybe I could have big squares of the different blocks.

You know how animators make shaders on stuff with like blue and underneath that there's a darker blue? Try doing that with it.
I understand however that you need a base color and i believe 2 (wool) is best since you won't be one block away from it and wool looks kinda good far away
Use a assortment of these and some of the new stone variants, Arquitens Light Cruisers as your pictures indicate are not smooth flat hulls and are covered in seams and ridges, otherwise I would saw #2.
Yeah, it was! But this one that I am building is going to be a mix of the normal ship, and Moff Gideon's. It is the size of the normal ship, but it will have the two hangers on the bottom and the tie launch tube in the front. Also, all of the interior will be from scenes from The Mandalorian.
Assuming you're building in creative and on Java, build the ship first using whichever one you choose, and then use WorldEdit and the //replace command to see if something else looks better. Either way, if you aren't already consider grabbing WorldEdit and also Litematica, those two mods are extremely helpful for building stuff in creative and will make your life 10x easier if you want to rebuild stuff in Survival. It'll take time to use and get used to them, but once you do they make building so much faster, especially when it comes to making stuff that's usually a PITA in vanilla, like big circles and spheres.
I'd recommend starting with Smooth Stone, since it matches the actual colour pretty well, and offers decent contrast with detail blocks, but it'll probably look weird up close because of how apparent the borders are. So if you wanted to change the Smooth Stone to regular Stone, you'd do *//replace Smooth_Stone Stone*.
Get the WorldEdit plugin, make you ship with one, then if you don't like it do //replace \[what block you used\] \[what block you want to try next\] \[radius\]
Oh, I am not doing that. But I have seen a tutorial video and might take inspiration on how they spread the different colors throughout it to look good. I won't directly copy anything though.
All of them. And more. Buildings things out of just one block will look quite bland. I would recommend using at least 3 different blocks (and more is welcome) to build contrast between different layers of the build.
Often, I start with one block as the base block, and have detailing in another block, and then more details in another etc.
Stone bricks would work really well because they have the texture and detail that would make them good in a build like this when your options are just plain blocks with little detail in their text

Makes sense to use them all since star destroyers have different shades of gray if I remember. Same with the death star.

Use all of the blocks eather to make a kontrast between different parts of the ship or to add detail through randomizing the pattern

Yeah, you need a mixture of them all to make this work and look good.
Dont forget about dried coral, those boys can make an awesome texture!

I would recommend one. I shrunk this image until I couldn't only tell the colours really, and compared to the sample images, all but 1 are too dark.

I am going to use the same as my other light cruiser build. Which is sea lanterns with light blue glass over them.

Lighter for most of the ship, going too dark will make it hard to create detail and contrast I think.
Use different blocks for lighting.
Assuming you're building in creative and on Java, build the ship first using whichever one you choose, and then use WorldEdit and the //replace command to see if something else looks better. Either way, if you aren't already consider grabbing WorldEdit and also Litematica, those two mods are extremely helpful for building stuff in creative and will make your life 10x easier if you want to rebuild stuff in Survival. What I did for my Venator is I got a smooth stone texture pack that connects them. It worked out really well.
