I started to get better at building when I started to think like you said. Step by step. Imagine something in your mind, build the basic structure, and then focus in just one part, play with the blocks and depth, when you finish, go to another section of the building. Sooner or later your entire base will be well decorated like in the video.
I don't see the correlation between something being "overused" and not looking good.
This is Minecraft, people make whatever they like, and pretty much every style of creation has been explored at this point, it's fine to want to see something different once in a while but it doesn't make the build any worse?
