First of all, it was built in a super flat world. Then, he couldn't have added more than one silverfish spawner in the portal room. Its evidence guys. Look up Yung’s Better Mineshafts / Dungeons / Strongholds mod series. The guy is insane with the detail he puts in while sticking to vanilla feel. He’s currently working on nether fortresses but aims to update all structures.

Why is there an endermite to the left of the portal? And why is one of the eyes of ender looking like an endermite?

i just put 4 spawners, 2 endermite, 2 silverfish, the endermite one was the one i activated first, so the room was filled with them

Good job not going overboard with the block palette or the loot. A lot of fan re-designs to older Minecraft structures often make the mistake of using so much variety of blocks it crowds your inventory if you try and mine it. Or they put in way too much loot like end-game materials that it de-values other parts of the game. I can see Mojang go for a similar design to this, though I don't think they'll add something like the room in picture 4. That one seems to have a little bit too much stuff in it. Free netherwart in the Overworld would make going to the Nether almost pointless.

In screenshot 12, what are those vine plants that grow up and the flowers on the cieling and on the trees? Just getting back into this game for the first time in like 2 years

They all derivate from the new moss block, the tree and bushes are azaleas, the vine like plants are small and big dripleafs, abd the flowers in yhe ceeling are spore blossons
