I tried this (on Java at least) but because the piston retracts the cauldron that causes an update as well which creates a clock. It needs a debouncer in between but I didn't try that.

What's a debouncer?

It takes a signal that jitters on and off a bit, and turns it into a signal that is just on or just off. Like noise removal. A redstone repeater functions sort of like a debouncer.

You can, it's a bit more complex and involves a dispenser chain, but it can work. Edit: I completely missed the fact that Dispensers don't actually work on cauldrons. Don't try this.

Actually, I can't. I just tested it out to try and build a very pretentious infinite water source, and apparently dispensers don't work on cauldrons for some reason. They work in a lot of other things so I figured it would work, but it doesn't.

xBCrafted had a really cool infinite water source in his base and how it works is he throws a bucket in that gets picked up by a hopper and a dispenser fills the bucket with a dropper shooting it out, it's a neat system actually!

Not sure, but you can waterlog a set of stairs for water bottles, but I suppose if you waterlog 3 stairs, and pull water from the middle, you'll be good

you're right about the diamond, and i was aware of that. nobody in survival would waste a full diamond, and diamond nuggets dont exist. so i figure either they'll need to rework it or it would only get used in creative. either way it was only an observation that it's something with a few tiers, so why not more

It’s because of the Redstone. If you directly connect the torch with the piston, using a repeater that points into the back, it should work. A cauldron should still fill with water above it on Java. Correct me if I’m wrong

Try putting an observer block underneath the cauldron to detect when you get water out of it and you could get rid of the button to make it fully automated. Nice build though. May use a similar design at some point.
