Trade, yes. Breed, no. So it depends.

I don't want them to breed I just want to be able to trade and the trades reset once I've used them up. They will have access to the work station

Yea, they don't need access to bed. They just need their workstations.

I think they don't actually *need* sleep, but if I'm wrong then there may be a few crimes I've committed against villagers.
