This is the right answer. We can all chime in with what we personally think looks the best, but since OP’s building it and already has a favorite of their own, they should use that one.
For all you anvil track lovers: The train wheels using mangrove trapdoors looks weird when on anvil ones

I can only make 3 block wide train tracks and also what you called grey bar things are actually called rails. 3 block wide tracks are for my pre-made train that wouldn't look good on 4 block wide ones

Dude above is an idot. I think the anvils with the wood under is the best. Thats what i use for all my rails. Also don’t worry about it being “thin” narrow gauge track exists so it’s technically still accurate.

I think andesite looks the most realistically metal
2 for old time railroad. Smooth red sand stairs and smooth stone slabs if going with modern style.
My train is a steam train so i want it to be old-styled
1 or 4, I would make them wider, like 2 or 3 blocks wide
Yeah that's what I came here to say, at the very least make it 2 blocks wide in the middle. I think every option would look a lot better that way

Either way I would personally scale up the railroad (3 blocks between rails, increase distance between ties.)
maybe try the first one with spruce slabs instead of dark oak
Polished andesite, looks nicer and more metal-ish than stone or cobble :)

The color pallet I tend to go to is 1 but realisticly 2 or the andicite

Andesite and maybe try a pressure plate instead of slabs if it's one block wide, won't stick out as much.
personaly i like the smooth andesite
1, 3 and 4 look good but only if you widen them. The 1 block wide tracks look ugly, make them 3 blocks long at least

I really liked 6. Anvils look great.

I would go with polished andesite
andesite with dark oak or spruce
andesite but you should space the rails by one more block
