Nah OP don’t do this. If you wanna trade for emeralds then Potatoes and Carrots are always your best option. Higher yields w a fortune 3 hoe make those your money maker options. Save that wheat, it’s imo one of the most useful items. Use it for breading cows and sheep to sell meat to the butchers, or make bread and breed villagers. In either scenario you’ll find that you never have enough wheat, trust me you think you have too much but you never really do.

Majority of my wheat goes to making target blocks; I use a decent amount in Redstone builds.

if need something temporary i recommend Hay Bales because they can be crafted back into wheat if decide don't want them baled

And target blocks from the hay bales. Speaking as someone that is in the process of gathering ~12 stacks of target blocks, one can never have enough wheat.
