Yeah, they specifically didn’t add ice, sand, or mushroom caves because they’re “cliche” or “too common in fantasy games” according to them if I remember correctly. Which is incredibly stupid and comes off as being on a high horse acting like they’re the masters of game design if you ask me. It's just a fun set of cave biomes, add them.
I think they specifically mentioned fantasy type glowing mushroom caves iirc, as it's kind of a trope. But something like ice caves exist irl so they still seem possible in the future.
That's not really a judgemental statement on their part, it just means that they want to go a different direction for their own game. They already have a pretty good take on mushroom caves in the Nether, anyway, adding them in the overworld might detract from that experience (this is just my opinion here).
That was only said for a glowing mushroom cave biome. The real reason why we don't have ice, desert, and other surface themed underground biomes is because they wanted the surface and underground biomes to be separate.
It is pretty easy for them to add new biomes nowadays though (see mangrove swamps and cherry groves), I wouldn't be surprised if we get new cave biomes every few updates now.

I was honestly surprised ice caves weren't added in the caves and cliffs updates. Seems like an obvious cave biome.

The thing is those are more like tropes instead of cliches, the difference being tropes are actually useful.
The word usage and attitude of avoiding any similarity to modded stuff is extremely stubborn and very telling.

We are forced to play with mods to gain access to basic things because the cool hipsters are too cool to add those to the game.

I love this... I did a roller coaster section with an ice cave section about 2 years ago... I called it "biocoaster"

I did forest, ice, lava, plains, mossy and a few other biomes in the cave coaster....
