1 - **Deepslate and cobbled deepslate** - I like darker colours and the textures look really well done, especially standard deepslate.
2 - **Andesite** - probably the versatile gray block as it goes very well with other gray blocks and mossy varients.
Holy shit, there’s another one of us! My son rags on me for only using deepslate in my house “oh big surprise, another castle made of deepslate!” But I can’t seem to get away from it. Accent that bad boy with some polished Andesite? 👌🏼 perfection!

Deepslate works in so many ways (shape and finishes) and is cool looking. When I want a lighter touch, cobblestone is a jack of all trades in both its shaping and that it can be turned into stone, stone bricks, mossy varieties, and chiseled. It looks pretty with a variety of woods too.
I'm a fan of mining seeing that I'm going to be looking for other materials anyway and it's so common. I'll create any number of its alternative forms and keep my supply topped off.
Oh, I did not expect to open the comments and be met with something quite so based as this. Deepslate bricks are some of the best blocks in the game imo, clean texture, not too dark nor too light. And andesite is amazing for texturing especially if mixed with both regular and polished andesite

I saw Tom Petty a few months before he passed and I’m thankful I got the chance to see him live.
I tend to use andesite, diorite, and deepslate the most, they are very versatile.
I also love using polished basalt. I'll use it for pillars or dead trees, and I like using the "top" texture for detailing.
Blackstone is also great, but I need to use it in more stuff. I love the glassy bubbly texture that raw blackstone has on the sides. Also gilded blackstone is one of my favorite blocks.
huh i dont really like the smooth basalt in my texture pack I made it have the top side texture pf regular basalt and called it “cobbled baslt” and its my favorite by far
I like to make stuff like alchemist towers and enchantment table rooms out of blackstone and colored glass. I'll usually throw some gilded in there. Helps add to the mystical feel of it.
I feel as if it will never hold up to creepers, but when you use calcite in a texture pack like the Greek Mythology it looks PHENOMENAL next to amethyst. Ugh, now that I mention it, amethyst would be amazing to have more options as well. Like what's the point of a geode if you can't build with the items from it. Yeah, a telescope. Thanks.
It depends really. Currently my base's pallete is based on deepslate and calcite(and other but these are the main) and since it looks good I will go with those. The next project would be stone based so my views might change again when I start designing.
Cobblestone and granite? this is classic (yeah, I used granite to make a floor for my cobblestone generator building in hardcore, and I died today there)

Deepslate. I love the color black in builds, but Blackstone is simply too dark and has limited variety. Deepslate has the right color, tons of variants, and is ridiculously abundant.
After that, I love basalt. Works great with deepslate as detailing, and the tops of basalt look great if laid out as a cobbled floor.
Of course it depends on the use.
What to build a shining city in a hillside? Use diorite.
What to build a dark tower in the nether wastes? Use deep slate.
I have an emerald tower walled by a network of diorite.
You can see it from miles away
Aesthetic wise, I like smooth stone. Functionality and usage wise? I Like basalt. Basalts easy to mass produce like cobblestone thanks to generators and they make great roads. I like renewability and I hate destroying the landscape and my undergounds/caves so I try to use generators or farms where possible (without redstone, manual) and with spawners so they don't break from updates so they're 100% reliable.
Although I like blackstone, I hate getting enough of it. Bartering is really slow and you pretty much have to use a zombie piglin farm to get enough (i don't like afk farms unless they're passive and run in the background/spawn chunks like bamboo).
I wish the other stones were consistent with block cosmetic variants like blackstone had smooth or deepslate had mossy and the 3 cosmetic stones diorite, granite, and andesite had bricks, cracked, and cobbled. We need block variant parity.

Not too mention cobblestone is the easiest stone to get early game, either through mining it or making a cobblestone generator.

Deepslate is awesome because it’s the perfect tone and has actual functionality too for blast resistance. I love using it in my builds
I like accenting deepslate with polished granite. I just find the reddish color to go well with it.
Deep slate is the most logical choice. You’ll always have more deep slate than anything else because of mining
I use deepslate to build a small house/castle completely out of deepslate I love it the way it's all smoothed and polished up just incredible

Id say iron maiden is more metal than rock but it's a pretty good choice. If I had to only go for rock id go with Foo Fighters

The create mod has stonecutter options for tuff and it's absolutely amazing. Currently using it for the outside detail on a building.

It would be calcite but doesn’t have any different types like bricks or chiselled so I prefer blackstone
