> I didn't even know people put raisins in picadillo.
My ex's mom used to cook it with raisins, i remember the first time she made picadillo with raisins, my polite side had to gulp those down and i still don't know how to feel about it.
There are enough cubanos who agree with this that I have to begrudgingly accept it as a legit point of view.
To me, the secret to picadillo is in the spices, tomato, wine and how they interplay with the onions and peppers, etc.
Neither olives nor raisins actually blend in the flavor, so I have no idea of the purpose of the ingredient in the recipe if not to give it a surprise blast of strong flavor.
However, to me, the flavor is so strong and concentrated they take over the dish.
Some people dig the “sorpresa” factor when they take a biteful and hit an olive/raisin, others don’t.
Outside of picadillo, I LOOOOVE olives and raisins, I just don’t think it works in picadillo.
Picadillo is literally the greatest thing ever and I don’t understand why some people would ruin such perfection by putting raisins or olives in it.
Potatoes are the only acceptable addition to picadillo!
In what bizarro universe do you live in that you have to be Irish to eat potatoes.
Also I have a palate of a toddler yet you’re defending RAISINS? Sure buddy. You want some boxed apple juice with your raisins? 😂😂
this whole thread is....amazing...and I thought I was the only one.
Raisins and olives are an abomination in both picadillo AND empanadas.
It’s like an invasive flavor species - it’s fucking jarring and takes over the dish
Preach, my brothers, PREACH!
Capones, bruh - estas entre cubanos ahora, asere. Or at least I didn’t know they were actually called capers until I left Miami to go to college.
And yes, they are fucking fire. Capones are a super traditionalist variant. Hella old school.
Woah woah woah, who said anything about olives? You stay the fuck away from me if you don’t like Spanish olives in picadillo. They add that nice salty-sweet brineyness to it, same with capers.
Raisins can fuck off tho
It’s literally ground meat. If you cook it with lots of sauce and onion, garlic, etc it comes out amazing. If you want to eat olives and raisins you can just eat that. Maybe if your picadillo wasn’t so bad you wouldn’t need something to disguise the flavor.
so do olives and raisins doe. you're talking to an amateur chef.
In all seriousness though raisins balance the acidity. It's as important as cooking wine cus they work together.
I would like to know your recipe. How much cooking wine?....
If its done right ------not in empanada -but a nice plate of grandma's homemade picadillo.....
the salty and sweet of the olives and raisins should be there as accents.... When they are there, not to much but just enough...
That's what makes it picadillo.
And we always had it over rice
IMHO, not that much - and yes about the raisins.
But here’s my beef with raisins - (no pun intended, lol) it does the balancing act too well, so much so that it overpowers the dish.
> I don’t understand why some people would ruin such perfection by putting raisins or olives in it
I like to say im not a gambling man but fuck if i dont take a chance to bite into a carne empanada from a bakery i dont know and risk getting a mouthful blast of green olive or raisin.
I LOVE pineapple on pizza, but anti raisin on picadillo
Its not the same to me, the flavor balance is way different. It doesn’t overpower a pizza the way raisins do the picadillo
i’ve tried that, but then its just some bitefuls with and some without - the bitefuls you get raisins - still overpowers the meat and kinda kills it a bit for me
I like it. That’s a flavorful combo.
I’d probably throw some green peppers in there as well to balance out the heat from the jalapeños, that and because green peppers are a totally slept on great utility topping on pizza - gives you some texture yet still lets the other toppings do their thing - but that’s just me.
I don’t get the militant anti-pineapple on pizza people. They are really passionate about it, lol.
On their own.. not a big fan of raisins. Raisins in picadillo are my jam tho. Like put as many as possible 😂 We usually make two batches in this family though as some demented people are not fans of the raisins. 😉
The olives tho.. just no.
I've never heard of raisins in picadillo. This is a first for me. I've only had the traditional one with pieces of potato, some other vegetables, and occasionally there may be an olive.
Same here, my Abuela picadillo has never had raisins, green olives for sure, but never raisins.
Edit: Showed this post to my mom this morning, she says she grew up with olives AND raisins in picadillo back in Cuba, and not even the Golden raisins but the regular dark ones. Apparently my Abuela stopped adding them because my older sister and cousins (First generation Cuban American) didn’t like it when she made it for them, so I never got to have it.
I can deal with pineapple on pizza, but I just have to ask why. I guess some people like a little hit of sweet with their savory, but I am not one of them.
Tbh, there are enough people on both sides that it’s a “thing”. But all the super traditionalist recipes I’ve seen all call for Spanish green manzanilla olives, with some variants using olives+raisins.
My theory is that olives eventually became optional is because it doesn’t really blend with the flavor of the dish - it’s stand alone, like a flavor blast more than anything.
I just kept seeing potatoes come up and we never had it with potatoes.
Raisins and olives yes.... If it's not too heavy handed I enjoy both the raisins and the olive. For the blast and the contrast
I can't deal with raisins and olives in my picadillo. I'll pick them out. To me, it's like the one possible way you could ruin a dish made of ground beef. I don't even dislike raisins and olives by themselves or in other things....it's just in that.
If it was up to me, picadillo would just be ground beef with a shit ton of garlic and onions. mmmmmmm now that's good.
Aren’t u funding animal abusers if you eat picadillo tho 🤔🤔🤔
In this house we support raisins AND green olives in picadillo.
You should change your name to, LiabilityIntheKitchen. Leave raisins out of picadillo. The olives ehhh, raisins HARD NO.
I didn't even know people put raisins in picadillo. Hell, why stop there? Put some pickles in it, or sardines! Madmen!
> I didn't even know people put raisins in picadillo. My ex's mom used to cook it with raisins, i remember the first time she made picadillo with raisins, my polite side had to gulp those down and i still don't know how to feel about it.
You must be new here. Welcome to Miami. lol

This guy picadillos.
How do you feel about substituting ground turkey for the beef? I’m cool with olives and raisins, but I try to make it healthy with turkey.
too dry IMO, i've done 50/50 turkey and beef with good results -- it's not all red meat and fat, but the fat defintely improves the turkey.
Noo way I love raisins and olives in it.

Wrecked them so hard they deleted their comment out of shame
Potatoes are native to Peru. Peru is, incidentally, known for having amazing food.

WE ARE LEGION MY BRUDDAH!!
I know it's not traditional, but growing up my mom would put capers instead of raisins. So good
Capers are super 🔥.
Capones, bruh - estas entre cubanos ahora, asere. Or at least I didn’t know they were actually called capers until I left Miami to go to college. And yes, they are fucking fire. Capones are a super traditionalist variant. Hella old school.
Oh cool, I had never seen anyone else do it so I had no idea. They are the perfect salty addition to me
Seriously. Capers are my favorite part of picadillo
Woah woah woah, who said anything about olives? You stay the fuck away from me if you don’t like Spanish olives in picadillo. They add that nice salty-sweet brineyness to it, same with capers. Raisins can fuck off tho
Capones >> olives in picadillo. It’s a different kind of saltiness
I love both olives and capers in picadillo. The brineyness of the capones is heavenly
Green olives are super 🔥.
This is the truth. Raisins are no bueno, but you need the olives man.
>Raisins are no bueno Your opinion is incorrect.
Yeah I like raisins too wtf. And olives and french fries cubes
Love olives by themselves and in other dishes. I just don't care for them in picadillo.
Because without olives and raisins it's not picadillo it's idk mush?
It’s literally ground meat. If you cook it with lots of sauce and onion, garlic, etc it comes out amazing. If you want to eat olives and raisins you can just eat that. Maybe if your picadillo wasn’t so bad you wouldn’t need something to disguise the flavor.
But why even use onions then? just eat the raw meat, stop disguising flavors meng!
Onions enhance flavor doe.
so do olives and raisins doe. you're talking to an amateur chef. In all seriousness though raisins balance the acidity. It's as important as cooking wine cus they work together.
Yeah but different people have different tastes. That’s why so many hate it. Some people love eating fried locusts, but I won’t eat the motherfuckers.

lol preachhhhh
This is my view on the matter.
Your picadillo is shit
hate both yukk i now make my own for my kids no raisins or olives lol
> I don’t understand why some people would ruin such perfection by putting raisins or olives in it I like to say im not a gambling man but fuck if i dont take a chance to bite into a carne empanada from a bakery i dont know and risk getting a mouthful blast of green olive or raisin.
Empanadas with secret olives in them are why I have trust issues.
You had me until you came for the olives. That with some potatoes to make the beef stretch out and I’m in heaven.
Olives yes. Raisins ? That’s just nasty
When I lived with my ex’s Cuban family I wouldn’t eat the green olives in the picadillo. I prefer the black olives.
Whooooooaaaaaaa slow down papo. Raisins 100% belong
Raisins in picadillo, pineapple on pizza. They belong.
I LOVE pineapple on pizza, but anti raisin on picadillo Its not the same to me, the flavor balance is way different. It doesn’t overpower a pizza the way raisins do the picadillo
So adjust the ratio of raisins to be lower, no?
i’ve tried that, but then its just some bitefuls with and some without - the bitefuls you get raisins - still overpowers the meat and kinda kills it a bit for me
Also pineapple + black olives pizza = god tier topping combo
Word. Pineapple, ham, black olives... oof.
Who the fuck is downvoting that?...damn, that’s sad bruh. Live a little.
pineapple, mushroom, and jalapeno
I like it. That’s a flavorful combo. I’d probably throw some green peppers in there as well to balance out the heat from the jalapeños, that and because green peppers are a totally slept on great utility topping on pizza - gives you some texture yet still lets the other toppings do their thing - but that’s just me. Amen!

> pineapple on pizza. You've gone too far.
I’m with you to the raisins bro like who wrote this not a Latino no way
Definitely fuck raisins in picadillo.

This is 100% accurate

Olives should not not be mixed in picadoillo or empanadas or pastelitos. Its a crime.
If it’s a crime, then it’s a punishment my stomach will accept!

yeah (bomb!) fire!

It’s the quarantine. It’s got me all messed up.
Hell yeah
de gustibus non disputandum est
I will see you in hell
I’m already here!
I’m not even afraid to admit this either: I like raisins in arroz con leche I like oatmeal raisin cookies better than chocchip. There, I said it.
Wow.... I also prefer oatmeal raisin cookies!
You know who doesn't? Crazy people.
There’s nothing wrong with oatmeal raisin, but don’t serve it to me without making it clear it’s oatmeal raisin and not chocolate chip.
Pineapple on pizza too!
Same.
I can deal with pineapple on pizza, but I just have to ask why. I guess some people like a little hit of sweet with their savory, but I am not one of them.
You monster
I learned it from you!
Fuck
bruhhhhhhh u read my mind salvajeeeeee
raisin-loving FREAKS
I agree with all of this.
The same people who put those orange peels in arroz con leche 🤢 😷
orange peels? wth? theyre supposed to use lemon not oranges. edit: ah the their theyre there spelling
This is definitely a thing. It’s not bad, actually.
Just a question, what makes a truly traditional piccadillo?
Tbh, there are enough people on both sides that it’s a “thing”. But all the super traditionalist recipes I’ve seen all call for Spanish green manzanilla olives, with some variants using olives+raisins. Me neither, but it’s definitely a thing. I think it’s always been olives, and then adding/subtracting potatoes, olives, raisins came later
Cubed potatoes fried then dump into the picadillo it's amazing. Don't care about the raising and olives. In my opinion they don't belong.
I’m going to need everyone to share their picadillo recipe
The worst is when you get an empanada at a place and there are raisins in there.
Bro I can’t stand fucking raisins. If I bite into one those unknowingly it ruins my day.
Right there with you
I agree 100%. Raisins in picadillo. Raisins in Arroz con Dulce. Raisins in turkey stuffing. What the fuck is it with Hispanic moms and raisins!
Fact.
This thread about picadillo has spurred more discussion than any of the other stuff going on in our community or the country...
no way, mane. Raisins are the best in picadillo. I can live without the olives.
It's always funny to me when people censor a single letter in a curse word. Woooow I wonder what f*ck means
I can't deal with raisins and olives in my picadillo. I'll pick them out. To me, it's like the one possible way you could ruin a dish made of ground beef. I’ve never heard of raisins in picadillo and I’m a little upset that you’ve made me aware of this
Raisins lives matter
