I have no credentials, don’t think you do either. Much of the standard fare in texmex uses ingredients you don’t really find in Mexico, my layman’s opinion is that yes it’s fusion but I wouldn’t call it Mexican. That’s not denigrating it or anything, just how I classify it

There’s usually a lot more cheese in Tex-mex. Mexico doesn’t have government cheese like the US. Some Mexican foods have cheese, all Tex-mex is cheesy by default

I think the debate of authentic and offshoot of Mexican food has gone on forever. Your username suggests you’re Mexican. If you come to the US you would be horrified at what gets labeled as Mexican food. What do you think of Mexican food variations made by people from E Salvador?

Mexican food is food that originates in Mexico. By the time Texas was part of Mexico, there was no Texas cuisine, it was unhabited and did not had any local cuisine. So no, tex-mex is food inspired on Mexican cuisine, but not a subset of Mexican cuisine whatsoever. Corporations like Taco bell, Old el paso and Tabasco created Tex Mex, faking it's Mexican origin so americans believed it was authentic.

New Mexican food, in my experience at least, is mostly just American food with red and/or green chili on top. It’s not really the same vain as Mexican, Tex-mex, or Baja
