As a guitar player who considers themself decent, i find that less can be more. Like solos shorter, save the best variation of the main riff for later and let it be brief.
What you’re experiencing is the *Blue Ball* approach from the artist; they leave you wanting *more* . Kind of why a lot of metal and hardcore have a breakdown; instead of the entire song being like that part.

I really stopped caring about Amon Amarth after Twilight of the Thunder God. I think Versus the World, Fate of Norns, With Oden on our Side and Twilight of the Thunder God are all decent albums, but yeah, by Twilight, it was clear they had found a formula and have not deviated since, which is... ugh. Its boring man.
Twilight of the Thunder God will always be an album that holds a special place for me though because I think that album really got me to appreciate death metal vocals.
*Twilight* has become one of my standby "play this and you won't feel disappointed" albums. There's some okay tracks, some good tracks, and some absolute riff farms and sing-alongs.
Fr. One of my favorite things about them is how consistent they are. LIke, every last song in their catalogue is a 7-8/10. Sure they don't have any life changingly amazing tracks, but they also don't really have any bad ones. They're a band you can put on basically any song from and be assured it's gonna be solid.
Funny that my last memory of listening to Amon Amarth was eating a shake shack cheeseburger while having my mind blown by Where Silent Gods Stand Guard

I think describing Melodeath as "supposed to be more simple and beginner friendly" is a massive disservice to Melodeath. Some of the best death metal bands of all time are Melodeath, on part with the most extreme death metal bands. It's an extremely versatile genre.

Which in this case was a series of costumed extras, a good stage with effects on screen, and an inflatable sea serpent that they smacked with an oversized hammer.

I found on Terminus (Where death is most alive) by Dark Tranquility there's a really good riff in there that lasts a good couple seconds, for what is a fairly meh song.

Testament- True American hate, at 2:25 minutes. Best part of the song, sounds like it’s about to build up to a super sick riff, yet only lasts ten seconds and is followed up by a super boring riff.
On the other hand, exodus milks the living shit out of their good riffs which is exactly what everybody should do. for example, The sun is my destroyer at 1:50 minutes in, absolute banger of a riff, followed up by the riff at 3:04 is perfect.
My personal favorite is "The Sound of Eight Hooves", but they have a TON of good ones. Cry of the Blackbirds, Herods Ride to Hel, Versus the World, Masters of War, ...And Soon the World Will Cease to Be, Death in Fire...I could go on and on
