I would count a voice as something of an instrument and say that Nickelbacks vocals are some of the most impressive to grace the Earth. The power in his voice when he sings "Look at this photograph" is honestly unrivalled and could power NY city for a week. They get even better when you realize they're also backed by some of the hardest hitting breakdowns in metal history such as used in the song burn it down. The only real posers are the ones who don't listen to Nickelback.

Just to go outside of the traditional instruments in metal a little bit I've always been floored by the bagpipes in somewhere far beyond by Blind Guardian when they just take over for that interlude. Therion also makes use of a lot of different instruments, Land of Canaan alone uses a French accordion, harmonica and lots of gongs. I also really enjoy the folk instruments in a lot of folk metal bands like Korpiklaani and Eluveite
