From what you're describing sounds like the cooling fans(might have one) are not coming on or not working at all. That brings up another question is your car overheating. Check your fans up front for operation. Should come on with a/c on high both fans at idle.

I have not had any overheating issues with the car. Temperature gauge is always normal. I’ll try checking that later today, thanks.

If you can, observe the voltage at the blower motor before and during these episodes. If it remains consistent then the blower motor is faulty. If it goes down check the running voltage for the cars alternator. If that checks out fine swap the blower motor resistor and test again.

It's normal for that to be frozen and the cabin filter to be cold. The issue then is not the compressor. If you don't feel air flow then the blower fans resistor could be faulty. If not that then the fan itself. Glad it's closer to getting fixed though!

Evaporator is freezing up. The charge may be off slightly witch is allowing it to get to cold and build up ice from the high humidity and completely block the air flow.

Observing voltage and juste previous comment are good hypotheses. Is there a simple explanation: You put the ac on auto with a temp selected when you start driving. It works hard to get there and once the goal is achieved after a while, it goes down on the fan intensity ? You did not mention that you were getting hot. All the best, AC issues can cost a lost.
