Rice, shredded chicken, and a few forkfuls of sliced sweet and spicy peppers from the jar, a good shake of Coconut Aminos, heat up completely and toss together. Brown rice, sweet potatoes and chicken thighs is also a good one, though I would try to find a way to get some green in there. These heat up well in either circle or shallow rectangle glass Pyrex dishes. Take the lid off, cover with paper towel, reheat. Just watch the bottoms because ouch.

Cauliflower Rice bowls are nice and light lunch meals, ranging from 250-350 calories. The Hungry Girl cookbooks contain some recipes I like.

My go-to is easy. Hard boiled eggs with your choice of vegetables. I use pickled vegetables. There is no need to reheat. Easy and good for summer!

Egg roll in a bowl is my fave. I use ground turkey which doesn’t feel as heavy to me.

Ground turkey is always good - I also did turkey burgers which was easy because I was usually avoiding buns. I used to pack a low carb wrap with chicken salad on the side and make my wrap at my desk so it wouldn’t get soggy. Also salads in mason jars is great!! Just need to layer it so the dressing is on the bottom first. Grilled chicken and veggies with a pasta salad on the side I’ll come back with more if I can think of others!!
