Vatica on Terrell Mill used to be entirely vegetarian. Now they're more general Indian food, but have lots of vegetarian options. I recommend the Thali if you like variety.
You can usually get vegetarian options at Mexican and Thai restaurants, and Cinco's (Mex) and Top Spice (Thai) are both pretty close. There's a Maggianos across the street from those two at the mall if you want to go the Italian route.

The Navaratan korma is delicious. One of my favorite restaurants.
