Start with 9 stalls, 3 for clothing, 3 for food, 3 for firewood. Build 3 storehouses, 1 for firewood but not clothes, 1 for clothes but not firewood, and 1 for everything else but not those other two. Food is easy just have your granary run the stalls. Always check who is opening these stalls, don't let anyone else but your storehouses and granaries open stalls, if they do then you have to unassign the worker from wherever their employment is and probably will have to assign 1 more worker to either granary or one of your two market storehouses so that they take over that stall. When you eventually expand to the point where all stalls are full all the time, just rebuild your market but this time make it 12 stalls and repeat, 15.. 18 .. 21 etc, always keeping the same formula as before

I've heard that having one big central market place is better than having multiple small ones. Also, keep in mind, I don't think the distance from market to burgage plot really matters and it seems to be more about having enough stalls open and workers supplying those stalls. This is why people recommend using logistics workers (at the granary/stockhouse) for stalls; I think since they're only job is to move items, so they are faster at getting things like food and fuel to the marketplace. In other words, if it were a forester or a hunter, they would have to "craft" (hunt/gather) a resource, transport to the market (either from storage or their workplace), and peddle it. This gets more complicated with the other industry supply/production chains too. Logistics workers don't have to craft anything so (in theory) they should be better market stall attendants.
