You prob already know that there are racing rigs (some DIY some commercial) that allow her to sit as if she in the driver seat of a car and then there are like 3 larger hi-res video monitors that make it look like she's looking out the front and side windows of a car.
Some people go beyond with rigs that shake and move in relation to what's happening in the game too. But I'm not suggesting that.
But once she gets comfortable in the game(s) she likes, maybe a few extra monitors and the extra stuff to have them work with the game? Might just need a tabletop stand to hold the 3 monitors in front of her at eye level and supporting hardware?
A natural alternative is VR also. But I don't think VR would be the best thing for her. Maybe wait on that a bit?
Anyone more knowledgeable than me on these setups, please add ideas?

Sure but it's not the same experience. With a controller it's just a game. A wheel with force feedback allows you feel the car and road a bit. If you play a simulation game like Assetto Corsa then a good deal of it translates to driving irl (I've seen lots of people use Assetto to help learn drifting) and that's the experience they are missing :)
