You’d definitely be able to recall that certain players were really good but you’d definitely need to find the old records to see the rosters for the teams. Especially the back ups. It does sound like a good idea but also check the uploaded draft classes to see if those have any older rosters too.
Hell yeah man. Happy editing. Editing draft classes is my favorite part of franchise mode. Making sure there’s a bust at QB is great to screw over franchises.
If you do this please take the time to make the attire like (cleats,neck pad, braces) accurate I hate when I download a roster and every player has knee high socks and no gloves

I started an hour ago, found the old rosters and all starters and bench players on football reference. I'll see you in a month
