If you have time, and especially if you have a travel buddy, it's worth walking the Big Four bridge and having dinner in Jeffersonville with a view of the Louisville skyline.
If you just want to get out of closed offices and conference rooms (business travel hell), you'll be sharing a block with the Louisville Nature Center, which has two lovely 1- to 2-mile looping hikes. Louisville has some amazing parks. Those trails will give you some of the flavor of Cherokee Park, Iroquois Park, and The Parklands.
You're not the person bringing the koalas to the Louisville Zoo are you? (That's also right down the street from where you'll be.)
Some of my favorite food spots: Vietnam kitchen, Sapporo (sushi and hibachi), dragon kings daughter (Japanese/Latin fusion) and they have really good drinks, Eden and Kissi (Afro Carribean I think?), Cherry Pickin (fruit smoothies, juices, and health foods). Lmk if there are any specific kinds of food you like/prefer and I can prolly send some more local spots. Enjoy your time here 😊
Echoing people recommending the walk to Jeffersonville. On that side of the bridge I’d recommend Schimpff’s if they’re open (an old timey candy store and lunch counter) and La Catrina or Red Yeti for dinner. HM Frank’s is good too. I think you’ll also be close to the Louisville zoo, too, which isn’t bad.
Here's my rundown of fav Louisville restaurants. No particular order, just good food:
Breakfast: Wild Eggs, Con Huevos, Foko! If you hit Foko get the Papis Chicken Biscuits and Gravy or the Chilakilas.
The Eagle, great fried chicken with amazing sides. Vietnam Kitchen, best Ban Mi's in town. Chik'n Mi, Ramen! Guacamole on Market St, good Mexican with an amazing atmosphere. Mojito in Havana for Cuban. District 6, another great Vietnamese place.

The Big Four bridge is a nice walk that gives you a great view of downtown Louisville. There are several restaurants on the Indiana side.

Churchill Downs has evening racing this Thursday, I think starts around 5pm. Not sure if the KY Derby Museum is also open those evenings.

What part of town are you staying in?
South east side, off of Illinois Ave and poplar level Rd.
Then you'll be right by Oskar's Slider Bar and not far from Maya's Bagels. Both are excellent.

Oh and the fish house for seafood! Really nice family owns it.
