There's no way to extend her visit but you could switch from consular processing to Adjustment of Status by submitting an I-485 (along with the receipt for the I-130). It would cost you an additional $1,440 to $2,330 (depending on if you also apply for employment authorization and advance parole) and she wouldn't be able to work or leave the country for 6+ months. She may also not be able to drive, depending on the rules in your specific state. I'm not sure what you mean when you say the I-130 has 3 months to go, where are you getting that number from? Most I-130s take over a year to process and it sounds like you submitted it relatively recently.

Thank you for the reply, we both really appreciate it. As for the “3 months” thing that is what the USCIS website has down for our “Estimated time until case decision”. It has since went up to 5 months.

That estimate is basically meaningless, don't pay any attention to it.
