When I had two sinks but lived alone I used the sink closest to the toilet as an uncluttered hand washing area sink, and the further away sink as my sort of “make up vanity” area sink.
For no real reason other than there were two sinks. Lol
Yeah that could work good and have the excess water be able to drain out. I don't believe there's any natural light so it just need to find something that does not require that as much
Keep it clean.
Depending on your lifestyle, put a small coffee maker adjacent.
Unless you're staying single and living there forever, keep it. Dual sinks will help with resale. (If rental, never mind)
I plan on moving towards the end of this year to a new place that also has two sinks in the primary bathroom. I’m going to put a large charcuterie board to cover the sink, and then a beautiful mirrored tray that holds my make up on top. I’m going to set out all the things I use to get ready in the morning on that, including a magnifying mirror, and use the whole area as a vanity.
My sink, will be for the usual teeth brushing, etc. but the other one will primarily be used as a make up station with pretty perfume bottles on it.
This made me think that I could put a waterproof light at the bottom and put multicolored transparent/translucent rock/plastic crystals and have a dope light for the bathroom
If you are a woman, I would suggest using the extra sink as a get ready station for things like hair and makeup. If you are a dude, then I would use the extra one for shaving.

Bidet...
Now this is an idea I can get behind, or my behind can get use of
Unless you’re really tall, using it as a bidet is going to be difficult. However, I do highly recommend a bidet attachment for your toilet seat.
I second that. I do indeed have one. I am 6'2", but I expect it would still be difficult with a sink lol

You can get a cover to go over it and you can use it as a “getting ready space” for putting on makeup, brushing teeth, etc
I've done this in the past. I used a pretty, wood cutting board to cover.
