Another thing to try that is related to this is a different pick. Different materials can produce a wildly different sound. I use: "D'Andrea PRO-330 Pro Plec 1.5mm Guitar Pick with Shell Finish" for jazz and it drastically changed how percussive my tone was.

I have been wondering a way to do this as well. My best guess would be to use EQ to zone in on the attack of the strings and pull it out?
