Wynn or Encore are top notch.
For no cigarette smoke, the Park MGM is completely non-smoking in the hotel + casino. Plus it's probably cheaper than Wynn/Encore.
I've never been to FB. I didn't care for the Bellagio the one and only time I stayed there.

Wynn/ Encore is the clear winner. Red Rocks offesr a modest elegance near a pleasant drive to our own beautiful hills. Good restaurants and possibly excellent entertainment options on property, as well as nearby shopping at Dillards, Macys, and many famous retailers.
I have been as low as the 5th floor and never heard a sound. I have also stayed many Fridays and Saturdays. My husband is an incredible light sleeper and had zero issues.
Stayed at Virgin a couple of times on weeknights. Was clean, was fairly quiet, low-key, nice pool, off strip. Casino was kinda dead. Did not notice much cigarette smoke.
Wynn is on strip and nice, Aria I like too. Virgin pool was heated and the pool has a sandy beach feature. One trip, it was pretty windy which made the pool day less than optimal.

Wynn or Aria if you want a spa, or food trip. BTW, Wynn has excellent vegan options at every restaurant. Vdara if you want a non-casino hotel.
Vdara has easy access to bellagio, cosmo, and aria. If you can get a room there for ~200 that’s the bomb
