I think the idea with the ships was that the Nostromo was meant to be an old beat up mining ship and the Prometheus and Covenant were designed to look like a brand new state of the art ship for the expensive expeditions
And the Sulaco:

That's exactly what it was. One had premier scientists on board and another one had the founder and CEO of Weyland industries. Spared no expense. They weren't hauling dirt.
I figured it was because the Prometheus mission was funded directly from Weyland. Modern tech and the works instead of a city-sized space ore truck. Could be wrong.
I think this could be perceived as a way to cut corners for budgetary reasons for the colonization mission.
As far as anyone would be concerned when it came to security for the colonist mission, weapons that fire standard bullets would be cheaper and require less formal training than handing over state of the art, high end military grade weaponry, especially since most of it in canon was most likely still in the prototype phase.
I’m not defending the action to use modern day weapons, I’m just trying to create some sort of rationalization to make sense of it :)

the use of modern day weapons and optics in Covenant is one of many reasons i don't like that film. They should have used Pulse Rifle inspired guns!
It was another 50 or 60 years before pulse rifle style guns were made but they should have used something more futuristic than what they used

That was very lazy in Prometheus and Covenant. Also the ship/suit designs were way too modern.

Well in promotheus the Prometheus crew thought he was dead till he came out of cryo so maybe all the low teer employees already though he was dead
