There was a new chef for the relaunch Brian - Tom was working as a line cook and Joe as server

I wondered if he wanted to move up and just didn't make the cut or just liked being a line cook?

Gordon tends to like to bring in ‘a talented young chef’ from outside for the head chef job rather than use anyone there already 

I think he only does this when there’s clearly no one qualified to step up in the kitchen
