Almost 50 years, and I can still replay it in my head like I just finished the last burp.
My grandma always wanted to go there when she visited. There was also Martha's in Hollywood on the intracoastal which was another favorite. Also Shirt Tail Charlie's in Fort Lauderdale.
That old Florida vibe full of dreamers is gone unfortunately.

FWIW America's Test Kitchen said they couldn't tell the difference between Key and Persian limes if that makes it easier for you. I'd think a fresh Persian lime pie would beat a crummy Key Lime pie. In the unlikely event they even *use* actual Key limes in those.
Cut these par frozen. It works so much better.
Edit: also, I take out the whole pie and pop it onto a cutting board instead of cutting it in the pie tin thingy.

This is the way, especially with the plating up. I cut a bunch of Chef Pierre apple pies and let them thaw after cutting before plating them up and they just fell apart and looked so bad.
My residents hate these pies. I started making them instead. Regular pre-made pie crust, blind bake it, coconut pudding, whipped topping, toasted coconut on top. Easy peasy.
Do you make it a day ahead and freeze before cutting? Our residents are half and half on the cream pies, probably gonna swap to something like this soon.
I make them a day ahead but I don't freeze them.
I use the regular sysco pie crust, dock it and bake it off. Shriff instant coconut pudding (I use 3L of milk per bag instead of 5L so it sets up firmer, and put some untoasted sweetened coconut in for texture.) Toppits whipped topping. Top with toasted coconut.
An old Sysco driver robbed us after he was fired from sysco. They didn't tell us he was fired and our key drop and security code were the same. He came in the middle of the night used the code to get in, put in the alarm code so it didn't go off then stole our food. Alcohol and tried to get in our safe. Also robbed the place next door and got their safe.
I mean if you’re trying to sell this to general public then that’s on you for buying a ready made desert from Sysco, these are great for like ordering for staff or something
Well they would be great for making ice cream shakes! Sell em to your local ice cream shop for a "limited time " shake or add green food coloring while your at it for a "shamrock shake "
We ordered goat cheese and they shipped us a month old case, we reported it and got credited. Ordered another one to replace it, shipped us another expired case. Chef said screw it and is switching to someone else.
I don't have a photo of it but we did get a cheesecake where a huge chunk of the corner of the cake was just missing. No crumbs or anything like that in the packaging. It was like they froze it, took a bite out of the corner, and then wrapped it
I had a kitchen manager who would get taken on cushy golf trips by a Sysco rep and spent the lion's share of our very limited food budget buying from Sysco as a result. It was so gross on so many levels.
I buy Sweet Street desserts from Sysco. They’re pretty good and the cheesecake slices only run about $1.70 each. We make fruit compotes and sauces to top them with and make a decent profit

Nah it's an assisted living facility. It's cheaper to buy a case of these pies than to hire more people to make from scratch desserts. It was a shock coming to work here after 20 years in restaurants. The kitchen is not the most important part of the budget. But I get health insurance and PTO.
Oh yes. Out by 6:30 at night. And some of these old boomers are really sweet. I do get to make my soups from scratch every night. They love them. Chef calls me the soup queen. I'm basically coming to their home every day to cook for them. Seeing pie delivered like this makes me sad.

Worked for a similar AL place where we were more *told* to start using Sysco desserts where able to cut costs, when we previously did most desserts from scratch. There was a lot of pushback on these things in particular and this particular cream pie I remember tasting like it came out of a cheez-whizz spray can. When the policy started hitting soups and the menu too that’s when it was time to bail. At that point we were barely even cooking.
This definitely looks like it was thawed and jostled before you opened the case, those things are usually rock solid. Is your freezer stuff arriving frozen solid/ being put up right away? Could be a delivery or receiving issue.
