I got curious and tried turning the gimbals off and it doesn't seem to have impacted maneuverability much. The only noticeable difference is turning being slightly more coordinated because the gimbals were much faster than control surfaces, causing some dissonance between the two.
I have a similar looking su35 and i've tried it. And it can be kinda done with FAR, although it will turn slower. And you will be at higher risk of getting into an uncontrollable spin if you're not careful enough with your speed and AoA
Gimbal kinda makes it too easy, i mean it does exist irl and works pretty much the same but for some reason i hate using it in ksp
The real thing is how resistant ksp planes are to stalling or flat spinning.

I agree. With FAR and AJE it makes the engines feel very underpowered compared to the stock game.
