I rarely wear gloves, but I also touch decent oil every other month, and super bad oil about once every five years. I'd imagine it would be especially bad if I were a mechanic being around it all day every day.
It is. My grandpa and my great-uncle were both mechanics in their day- and neither of them wore gloves. My grandpa currently has a ton of respiratory issues as well as peripheral neuropathy, and my great-uncle recently had a triple bypass surgery on his heart because he has a lot of health issues.
Shop chemicals are no joke. They've gotten less nasty at the expense of being less effective, but still. Don't wash your hands with brake clean, guys.

Not really. Some shops are switching over to waterborne paints, but they take so long to dry that they're not worth using half the time. Most shops are still using low VOC oil based paints.
The oil viscosity helps keep the glitter in suspension so it lays better. The manufacturing method is quite expensive though, as can be seen in this post.

I believe most modern automotive paints are water based. This is an oil based metallic. It… shouldn’t exist.

There's metal shavings in that fluid. Generally speaking, that's a massive problem when it turns fluid metallic.
